More than 600 species of holly are known. While holly berries are toxic to humans, they are a very important for many varieties of birds and other animals. When first appearing in fall and early winter, the berries are hard and not palatable. After a few iterations of being frozen and thawed, the soften and become milder in taste. Birds take refuge in hollies in winter storms for protection from predators, general shelter, and food.
