Chile Relleno
With the issuance of the new Delicioso Forever stamps, the U.S. Postal Service celebrates the influence of Central and South American, Mexican and Caribbean foods and flavors on American cuisine. The booklet features stamps depicting tamales, flan, sancocho, empanadas, chile relleno, and ceviche.
Chile relleno is a Mexican dish of a stuffed, roasted, and fresh poblano pepper, a type of pepper named for the city of Puebla. The pepper normally is stuffed with melted cheese, perhaps queso, or a picadillo meat make of diced pork, raisins, and nuts. The dish is seasoned with canella and covered with corn masa flour or an egg battered, and then fried.
